How Returning to God’s Design Healed My Body — and Can Heal Ours as a Nation


When I first began getting sick after nearly every meal, I didn’t realize it would lead me here — to a deep rediscovery of how God designed food to nourish, not harm.

I remember crying to my husband one night because no matter what I ate, I felt awful. My stomach ached, I felt nauseous, and I was down to eating little more than chicken and potatoes. My doctor told me I had IBS — incurable, he said — and handed me a list of foods to avoid. Dairy, gluten, vegetables, even fruit. Each time I removed another food, the list of what I could eat grew smaller. I didn’t know what was safe anymore.

It’s hard to describe what that kind of hopelessness feels like — when food, something meant to nourish us, becomes something you fear.


The Turning Point

Desperate for answers, I hired a nutritionist – Vanessa from Nourished Functional Nutrition (she’s amazing). She taught me something I had never heard before: that how our food is raised matters just as much as what we eat.

She spoke about “grass-finished” beef, “pasture-raised” chicken, “wild-caught” fish, and organic produce — terms that were completely new to me, yet felt strangely familiar. Growing up in Romania, all of this was normal. We didn’t need labels. We knew where our food came from. Milk came from a neighbor’s cow, eggs from our own hens, and bread was made from fresh flour. People weren’t “gluten-free” or “dairy-free.” Food was just food — unprocessed, local, and whole.

Her guidance led me to uncover a truth that changed everything:

Food began making us sick only when we changed it from how it was meant to be.


From Elimination Diets to Real Food Revelation

After a few months of restrictive eating and supplements, I started to feel small improvements — but something still felt off. I wasn’t looking for temporary relief; I wanted healing. I wanted to know why my body was struggling in the first place.

Then came a trip home to Romania. I decided to test something — I ate dairy, bread, and everything else I’d been avoiding for months. To my surprise, I had no issues at all.

That’s when it hit me: the problem wasn’t me. It was the food.

I’ve heard so many people say the same thing — they travel to Europe and can eat everything that makes them sick in the U.S. The difference isn’t our bodies; it’s our food system. That realization changed my life and sent me down a path of research, reading, and rediscovery about how far we’ve drifted from God’s original design for nourishment.


A Mother’s Wake-Up Call

Years later, after my first baby was born, I realized how deep the problem truly ran.

In the hospital, I was handed a bottle of formula and told to use it since breastfeeding was hard. The advice came from a lactation specialist — someone who was supposed to help me learn to breastfeed. I trusted her.

But soon after, my baby started crying constantly. She couldn’t sleep, she wouldn’t settle, and I had no idea what was wrong. I didn’t know what was normal for a baby and what was too much crying. When I asked our pediatrician for help, he just said, “She’s a colic baby.”

I believed him — until one night, out of desperation, I flipped over the formula bottle to read the label.

It was Enfamil NeuroPro Ready to Feed Infant Formula.
And here’s what I found inside:

Ingredients: water, nonfat milk, lactose, vegetable oil (contains one or more of the following: palm olein oil, coconut oil, soy oil, high oleic sunflower oil), whey protein concentrate, synthetic vitamins, soy lecithin, mono- and diglycerides, carrageenan, polydextrose, mortierella alpina oil, schizochytrium sp. oil, potassium citrate, calcium carbonate, calcium chloride, magnesium phosphate, sodium chloride, calcium phosphate, ferrous sulfate, zinc sulfate, cupric sulfate, manganese sulfate, sodium selenite, potassium iodide, niacinamide, calcium pantothenate, vitamin a palmitate, thiamin hydrochloride, riboflavin, vitamin b₆ hydrochloride, folic acid, vitamin k₁, biotin, vitamin b₁₂, vitamin e acetate, choline chloride, inositol, vitamin d₃, taurine, l-carnitine.

Why These Bolded Ingredients Are Concerning:
Ingredient

Vegetable oils (palm, soy, sunflower)
Highly processed and inflammatory; often oxidized and can disrupt infant gut health and hormone balance.
Soy oil & soy lecithin
Contains phytoestrogens; often derived from GMO soy; difficult for infants to digest.
Palm olein oil
Linked to reduced calcium absorption and constipation in infants.
Coconut oil (in isolation)
Not inherently bad, but when combined with other industrial oils, it disrupts fatty acid balance.
Mortierella alpina oil & Schizochytrium sp. oil
Lab-grown sources of DHA/ARA — often extracted with hexane or other solvents.
Carrageenan
A thickener shown to cause intestinal inflammation in animal studies; banned in organic baby formulas in the EU.
Polydextrose
Synthetic fiber and filler; can cause gas and digestive upset in infants.
Mono- and diglycerides
Often used as emulsifiers; can contain trans fats.
Synthetic vitamins (e.g. vitamin A palmitate, niacinamide, folic acid, vitamin E acetate)
These are lab-made isolates, not naturally occurring nutrients; often poorly absorbed and can build up in tissues over time.
Choline chloride, inositol, taurine, l-carnitine
These are synthetic additions to mimic breast milk — not inherently toxic, but artificial copies of compounds the body is meant to get from real food.

Soy. Seed oils. Synthetic additives. Lab-created fats.

My heart sank.
These were the very ingredients my nutritionist had taught me to avoid — the same ones that had once made me sick.

How could something meant to nourish life begin with such a list?
How could a hospital — a place meant for healing — hand this to new BABIES as “nutrition”?

That was my breaking point.

I stopped trusting the system that had once claimed to keep us healthy.

Not long after, I discovered there is another way. A real-food, nutrient-dense baby formula made with ingredients like goat milk, healthy fats, and whole-food nutrients.

It gave me hope again — and it reminded me that when we return to real food, healing follows. P.s. It didn’t take long for these big companies and FDA to go after this poor family owned farm and bully them into taking down their formula. I’m here to keep fighting for them and share it on.

The Healing

I started drinking raw A2 cow’s milk, removed processed foods from my diet, stopped eating inflammatory oils and sugars, and suddenly I healed. No bloating. No pain. My energy came back. My skin cleared.

Within weeks, my symptoms — the ones I was told were incurable — disappeared.

It was as if my body finally exhaled after years of trying to survive on imitation food.

That’s when I asked the next big question:

What about the “gluten-free” rise? What was it about flour in the US that made everyone sick?


How I Started My Micro Mill Business – Flourish Mill & Grain 🌾

Around this time, I began learning what had actually happened to flour in America — and it was shocking.

In the 1920s, steel roller mills replaced traditional stone milling. These machines stripped out the bran and germ — the most nutritious parts of the wheat — to make shelf-stable white flour that would last for months. Those vital parts were sold off as animal feed, leaving people with a lifeless product that quickly led to nutrient deficiencies like pellagra and beriberi.

To cover the damage, millers began adding synthetic vitamins back in — the beginning of “enriched” flour. And even after it became clear that real flour was healthier, the commercial mills refused to return to the old ways. Shelf life was simply too profitable and sadly consumers were blissfully unaware of this which led to the small, local mills being put out of business.

When I learned this history — and heard Sue Becker explain it so clearly in The Truth About Wheat — I was undone. I knew I had to share this message.

That’s when I launched Flourish Mill & Grain, focusing on ancient grains like einkorn, spelt, and khorasan — grains that have remained pure, untouched, and easier for our bodies to digest.

The very first thing I milled was spelt, and the difference was instant. The waffles we made that morning had flavor before the syrup ever touched them — rich, nutty, and filling. We got full on half the amount we’d normally eat and stayed satisfied for hours. I could digest it easily, without pain or bloating.

That was the moment I realized: this is bigger than food.
It’s about helping families heal by returning to the nourishment God designed from the beginning.

Closing Reflection

My story began with sickness, confusion, and a desperate prayer for healing. But what I found was something far greater — the simplicity and power of God’s design.

Real milk.
Real flour.
Real food.
Real health.

We don’t need another diet trend or pharmaceutical fix. We need to return — to the wisdom of creation, to the rhythms of nourishment, to the table.

Because when we eat as God intended, we don’t just survive — we flourish.
